Vegan ramen with pak choi

Ingredients for 2 people:

1 pack of ramen noodles
30g Lotao Veggie Mince
500ml vegetable broth
✓ 15g miso paste
1 pak choy
100g brown mushrooms

Preparation:

Soak the veggie mince according to the package instructions and fry it in a pan with a little oil and spices.

Bring the vegetable broth and miso paste to the boil in a pot.

Wash the pak choi and cut into strips. Clean and halve the mushrooms. Cook in the vegetable broth for a few minutes. Add ramen noodles and let simmer until soft.

Serve ramen sprinkled with veggie mince.
