Vegan crêpes with coconut blossom sugar

Our Cr êpes get their natural sweetness from coconut blossom sugar, which adds a caramel-like note and is therefore an unusual alternative to conventional sugar. Filled with a heavenly apple filling, these cr êpes a perfect balance between sweetness and freshness. Whether for breakfast, as a dessert or simply as a sweet meal in between – with these vegan cr êpes with coconut blossom sugar and apple filling bring a delicious change to your plate.

Ingredients for 4-5 crêpes:

✓ 200 g flour (e.g. spelt flour)
✓ 400 plant-based milk (e.g. soy or oat)
✓ 3 tbsp Lotao coconut blossom sugar
✓ 1 tbsp coconut oil (for the pan)
✓ 1 tsp baking powder
✓ 1 tsp vanilla extract or powder
✓ 1 pinch of salt
✓ 1-2 pinches of cinnamon

Toppings:

✓ 1 apple
✓ 1 tbsp coconut blossom sugar
✓ 1 tsp cinnamon
✓ 1 tbsp coconut oil
✓ Some water
✓ Soy yoghurt

Preparation:

  1. To make the crepe batter, first mix the wet ingredients and then add the dry ingredients.
  2. Mix all ingredients into a smooth dough and set aside for 30 minutes.
  3. Brush a pan with coconut oil and fry the crêpes in it.
  4. Cut the apple into cubes, season with cinnamon and coconut blossom sugar and fry in a pan with coconut oil and a little water.
  5. Fill the crêpes with the apple mixture and serve with soy yoghurt.
