Ingredients for 1 Halloween pie (Ø 26 cm):
✓ 2 rolls of ready-made vegan shortcrust pastry
✓ 75 g Lotao Veggie Mince
✓ 1 small onion, finely chopped
✓ 1–2 cloves of garlic
✓ 2 medium-sized carrots, diced
✓ 150 g frozen peas
✓ 1 tbsp tomato paste
✓ 150 ml vegetable broth
✓ 100 ml plant-based cream
✓ 1 tsp sweet paprika powder
✓ ½ tsp thyme or rosemary
✓ Salt & pepper – e.g. with Lotao Bali Pur Fleur de Sel for a natural aroma
✓ some olive oil for frying
Preparation:

Sauté the vegetables
Sauté the onion, garlic and carrots in a little olive oil until they get a light color. -
Add veggie mince and spices.
Add the veggie mince directly to the pan and sauté – no soaking required. Stir in the tomato paste and deglaze with vegetable broth and plant-based cream. Season with paprika, thyme, salt, and pepper. Simmer for 5 minutes. -
Fold in the peas
Add the frozen peas to the filling and heat briefly until everything is nice and creamy.
Tip: If the filling is too runny, simply mix 1 tsp of cornstarch with cold water and fold it in.

Assemble the pie
Grease a tart or pie dish and line it with a shortcrust pastry roll. Spread the filling evenly over the pastry. Cut out a Halloween-themed shape (e.g., a pumpkin face) from the second pastry roll and carefully place it on top. Press the edges firmly to seal. -
Bake
Bake in a preheated oven at 200 °C (top/bottom heat) for approximately 25–30 minutes, until the dough is golden brown.
