Ingredients for 2–3 servings

 200 g Lotao Veggie Gyros
 1 tbsp olive oil
 23 pita or flatbreads

For the plant-based tzatziki

 300 g soy yogurt
 ½ cucumber, grated and well-squeezed
 1 small clove of garlic, finely grated
 1 tbsp lemon juice
 1 tbsp olive oil
 Salt & pepper
 Optional: dill or mint

For the filling

 Salad of choice
 12 tomatoes, sliced
 ½ red onion, in thin rings

 Preparation time: approx. 15 minutes

Preparation

  1. Fry the Veggie Gyros
    Heat olive oil in a pan and fry the Veggie Gyros over medium heat until golden brown. This develops the savory roasted aromas.
  2. Prepare the Tzatziki
    Mix soy yogurt, grated cucumber, garlic, lemon juice, and olive oil in a bowl. Season with salt and pepper. Optionally stir in dill or mint.
  3. Warm the Pita
    Briefly warm the pita or flatbreads in the oven, toaster, or a pan. This makes them soft and perfect for filling.
  4. Fill the Pita
    Cut open the pitas and fill them with lettuce, tomatoes, onions, and the freshly fried gyros. Finally, top with the creamy tzatziki.
