Creamy veggie gyros with tomato rice & tzatziki

Ingredients for 2 people:

Gyros

✓ 1 pack of Lotao Veggie Gyros
✓ Some oil for frying

Tomato rice

✓ 150 g sushi rice (alternatively: our pink basmati rice for a special touch)
✓ 6 vine tomatoes
✓ 1 red onion
✓ 100 ml vegetable broth
✓ 1 tbsp tomato paste
✓ ½ tbsp oregano
✓ 1 tbsp erythritol
✓ A splash of oat cream
✓ Salt & Pepper

Tzatziki

✓ 300g plant-based or Greek yogurt
✓ 1 cucumber
✓ 1 clove of garlic
✓ Fresh dill
✓ ½ tsp erythritol or honey
✓ Salt & Pepper

Preparation time: approx. 30 minutes

Preparation:

1. Fry the veggie gyros

  1. Heat some oil in a pan.

  2. Fry Lotao Veggie Gyros for about 5 minutes until golden brown.

  3. Keep warm.

Tip: The veggie gyros is already perfectly seasoned – you don't need any additional marinade.

2. Prepare the tomato rice

  1. Cook the rice in a rice cooker or pot according to the instructions.

  2. Halve the tomatoes and fry them in a hot pan with the cut side facing down.

  3. Finely dice the onion, add it and fry.

  4. Deglaze with vegetable broth, add oregano, salt & pepper.

  5. Simmer for about 10 minutes, then peel off the tomato skins and puree the mixture.

  6. Stir in tomato paste, oat cream and erythritol.

  7. Stir in the cooked rice and mix everything well.

3. Prepare the tzatziki

  1. Grate the cucumber or process it in a juicer (use only the pulp).

  2. Squeeze out the liquid gently.

  3. Finely grate or press the garlic.

  4. Mix yogurt, cucumber pulp, garlic and dill in a bowl.

  5. Season with salt, pepper and erythritol or honey.

  6. Let it steep briefly.
