Preparation of stuffed peppers with veggie mince
1. Prepare the peppers : Wash the peppers, cut off the tops, and hollow out the insides. Place the prepared peppers in a baking dish with a little water and bake in a preheated oven at 200 degrees Celsius for 20-30 minutes, until soft.
2. Cook the rice : Wash the smoked basmati rice thoroughly and cook in lightly salted water according to the package instructions until tender. Set aside.
3. Sauté the veggie mince : While the rice is cooking, heat some olive oil in a pan and sauté the finely chopped onion and garlic clove until translucent. Add your choice of spices and tomato paste and sauté briefly to release the flavors. Then add the Lotao veggie mince and sauté well.
4. Prepare the sauce : Add about 100 ml of the strained tomatoes to the pan and mix well. Add the cooked rice and simmer for about 5 minutes to allow the flavors to meld. Season with salt and pepper to taste.
5. Stuff the peppers : Spread the remaining strained tomatoes on the bottom of a casserole dish. Fill the pre-baked peppers with the rice-veggie-mince mixture and top with (vegan) feta cheese.
6. Final baking : Place the stuffed peppers back into the baking dish and bake for another 20 minutes at 200 degrees Celsius, until the feta is lightly browned and the peppers are completely soft.
7. Serve and enjoy : Serve the stuffed peppers hot – perfect with a fresh salad or a delicious side dish of your choice.
