We've reinterpreted the classic baked potato and combined it with Lotao Veggie Barbecue, which adds a smoky flavor, and a tart white cabbage salad. Ingredients for 2 people:
✓ 2 large potatoes
✓ 200g coleslaw or vegan cole slaw
✓ 1 pack of Lotao Veggie Barbecue
✓ 100 g vegan creme fraiche
✓ 1 tbsp mixed herbs (fresh, dried or frozen)
✓ 2 tbsp croutons
Preparation:
Wash the potatoes thoroughly if you want to eat the peel later. Cook the potatoes in the pot for about 20 minutes, depending on their size. Then rub with a little salt and oil and continue cooking in the preheated oven until you can easily insert a fork into it.
Tip for those in a hurry: Buy pre-cooked potatoes in a vacuum bag.
Mix the vegan creme fraiche with the herbs. Heat the Lotao Veggie Barbecue in the pan or microwave.
