Aperol Jelly

Refreshing, elegant, and surprisingly different: This Aperol jelly is the perfect summer dessert idea—easy to make and made entirely without animal gelatin. With slightly tart Aperol, sparkling Prosecco, fresh orange juice, and the naturally sweetening Lotao erythritol, this aromatic jelly is not only visually stunning but also delicious.

Ideal as a fruity finale to a summer dinner or as a sophisticated snack between meals. And best of all, it's incredibly easy to prepare!

What makes our Aperol jelly special?

Ingredients for 4 servings:

✓ 200 ml Aperol
✓ 200 ml dry Prosecco
✓ 100 ml freshly squeezed orange juice
✓ 1 tsp lemon juice (optional, for extra freshness)
✓ 6 tsp agar-agar (powder form)
60 g Lotao Erythritol (add to taste)


Preparation:

  1. Mix agar-agar
    Mix the agar-agar with about 100 ml of orange juice in a small container. Make sure there are no lumps.

  2. Heat liquid
    Combine the Aperol, Prosecco, the remaining orange juice, and the Lotao erythritol in a saucepan. Heat the mixture over medium heat and stir well until the erythritol is completely dissolved.

  3. Boil the agar-agar
    Now add the mixed agar-agar mixture to the pot. Bring everything to a boil, then reduce the heat. Let the mixture simmer gently for two to three minutes – this allows the agar-agar to develop its gelling power.

Important: Agar-agar must simmer for at least two minutes, otherwise the jelly will not set properly!

  1. Stir in lemon juice
    Remove the pot from the heat and stir in the lemon juice, if desired. This provides additional freshness and balance.

  2. Filling & cooling
    Carefully pour the hot liquid into small glasses or dessert cups. Let it cool to room temperature first, then refrigerate for at least four hours, ideally overnight.
