Ingredients for 3-4 servings

✓ 1 tbsp olive oil
✓ 1 shallot, finely chopped
✓ 2 cloves of garlic, finely chopped
✓ 250 g Orzo (rice noodles)
✓ 600–700 ml vegetable broth
✓ 1 small zucchini, diced
✓ 1 red bell pepper, diced
✓ 200g Lotao Veggie Gyros
✓ 2 tbsp plant-based yogurt or tahini
✓ Salt & Pepper
✓ A squeeze of lemon juice
✓ Fresh parsley for serving

Preparation time: approx. 25 minutes

Preparation:

  1. Heat olive oil in a large pot. Sauté the shallot and garlic in it until translucent.

  2. Stir in the orzo and toast briefly.

  3. Deglaze with vegetable broth, then add zucchini and bell peppers.

  4. Simmer for about 12-15 minutes, until the orzo is creamy and cooked through.

  5. In a separate pan, fry the veggie gyros until golden brown.

  6. Mix the gyros with the orzo and heat briefly.

  7. Stir in yogurt or tahini, season with lemon juice, salt & pepper.

  8. Serve with fresh parsley.

Tip: For even more creaminess, simply add a splash of oat cream.
