✓ 2 spring onions
✓ 1 large carrot
✓ 100 g white cabbage (finely shredded)
✓ 1 tbsp rice vinegar
✓ 1 tbsp mirin (alternatively: 1 tsp sugar)
✓ 1 tbsp sesame oil
✓ Salt & pepper to taste

✓ 1 pack Lotao Veggie Curry
✓ 4 steamed bao buns
✓ Vegan Sriracha mayo
✓ Some sesame & chili flakes for garnishing

Total time: approx. 25 minutes

Preparation:

  1. Prepare the vegetables: Finely slice the spring onions, grate the carrot, and finely shred the white cabbage. Mix everything in a bowl with salt, pepper, rice vinegar, mirin, and sesame oil. Let it sit for a moment – this will give the salad a nice, aromatic, and crisp texture.

  2. Heat the veggie curry: Heat the Lotao Veggie Curry in a hot water bath or according to the package instructions. It will already be wonderfully aromatic with coconut, turmeric, and curry spices.
