Ingredients for 2 people:
✓ 2 spring onions
✓ 1 large carrot
✓ 100 g white cabbage (finely shredded)
✓ 1 tbsp rice vinegar
✓ 1 tbsp mirin (alternatively: 1 tsp sugar)
✓ 1 tbsp sesame oil
✓ Salt & pepper to taste
✓ 1 pack of Lotao Veggie Curry
✓ 4 steamed bao buns
✓ Vegan Sriracha mayo
✓ Some sesame & chili flakes for garnishing
⏰ Total time: approx. 25 minutes
Preparation:
-
Prepare the vegetables: Finely slice the spring onions, grate the carrot, and finely shred the cabbage. Mix everything in a bowl with salt, pepper, rice vinegar, mirin, and sesame oil. Let it sit for a moment – this will add a nice crunch and flavor to the salad.
-
Heat the veggie curry: Heat the Lotao Veggie Curry in a hot water bath or according to the package instructions. It will already have a wonderful aroma of coconut, turmeric, and curry spices.
-
Steaming Bao Buns: Heat the Bao Buns over hot steam for a few minutes until soft and fluffy – e.g., in a bamboo basket or steamer.
-
Top the buns: Spread some vegan sriracha mayo on each bao bun, then add a portion of the fresh coleslaw and pour the warm veggie curry over it.
-
Garnish & enjoy: Top with sesame and chili flakes – your Asian-inspired comfort food is ready!
Tip: Be sure to save the leftover curry sauce – it makes a great dip for the buns or as an extra aromatic kick on the plate!
