Ingredients for 2 people:
✓ 2 spring onions
✓ 200 g mushrooms
✓ 1 small pak choy
✓ 2 tsp sesame oil
✓ 70 g Mie noodles
✓ 1 pack Lotao Veggie Curry Sauce
For the topping:
✓ 100 g edamame (pre-cooked)
✓ 1 tsp sesame seeds
⏰ Preparation time: approx. 15 minutes
Preparation:

Prepare the spring onions: Slice the green part into thin rings and place it in ice water to keep it wonderfully crisp. Slice the white part into rings as well.

Cutting mushrooms: Quarter the mushrooms.

Fry: Heat sesame oil in a pan, briefly fry the spring onions (white) and mushrooms.

Add curry sauce: Stir in the Lotao curry sauce, add a little water if necessary, and simmer over low heat.

Cook the bok choy and noodles: Roughly chop the bok choy and add it to the pan along with the mie noodles. Cover and simmer for 5 minutes over low heat.

To serve: Top with edamame, sesame seeds, and green spring onions – done!
Tip: If you like it a little spicier, you can add fresh chili or sriracha. 🌶️
