Ingredients for 2 burgers:
✓ 1 pack of Lotao Veggie Burger Mix
✓ 2 spelt buns
✓ 1 ripe avocado
✓ 1 splash of lime juice
✓ 1 handful of lettuce leaves
✓ Optional: vegan mayo
For the cranberry and onion chutney:
✓ 1 medium onion
✓ 1 tsp freshly grated ginger
✓ 200 g frozen cranberries (or fresh if available)
✓ 25–30 g maple syrup (depending on desired sweetness)
✓ 1 tsp rice vinegar
✓ 1 pinch of cinnamon , pepper & salt
✓ 25 ml water
✓ 1 tbsp olive oil

Preparation:

Prepare veggie patties:
Prepare the Lotao Veggie Burger Mix according to the package instructions. Then form into two patties and fry in a pan with a little oil until golden brown. -
Cooking chutney:
Finely dice the onion and sauté in the oil until translucent. Add the cranberries and ginger and sauté briefly. Deglaze with maple syrup and rice vinegar . When the berries begin to pop, season with cinnamon , pepper , and salt . Add water and simmer over low heat for 10–15 minutes . The chutney should have a creamy consistency—then remove from the heat and, if desired, pour into a jar. -
Prepare buns and avocado:
Halve the spelt buns and lightly toast them in the oven or toaster. Mash the avocado , finish with a squeeze of lime juice , and season with salt and pepper. -
Stacking burgers:
Spread the bottom half of the bun with a little mayo (optional), top with lettuce , avocado , the veggie patty , and the fruity chutney . Put the lid on – your favorite deluxe burger is ready!
Tip: The chutney will keep in the fridge for up to a week – also perfect as a dip for grilled vegetables or sandwiches!
