What makes these pastry hearts special?

Ingredients for approximately 12 heart-shaped pastries:

✓ 250 g flour (type 405 or 550)
✓ 200 g cold butter
✓ 100 g low-fat quark
✓ 1 egg yolk
✓ 1 tbsp sugar
✓ 1 pinch of salt
✓ 2 tbsp cold water

For the filling:
✓ 4-5 tbsp coconut blossom sugar from Lotao
✓ 1–2 tsp cinnamon (optional)
✓ 1 tbsp soft butter
✓ Some flour for the work surface

For coating:
✓ 1 egg yolk + 1 tbsp milk (whisked)

Vegan preparation possible: Simply replace quark and butter with plant-based alternatives, e.g., soy quark and vegan baking margarine. Instead of egg yolk and milk, plant-based milk with a little maple syrup is suitable for brushing.

Preparation:

  1. Prepare the dough:
    Roughly knead together the flour and butter. Then add the quark, egg yolks, sugar, salt, and water, and quickly work everything into a smooth dough. Flatten and chill for 30 minutes.

  2. Fill & shape:
    Roll out the dough into a rectangle and spread with softened butter. Then sprinkle with coconut blossom sugar and, optionally, cinnamon. Roll up from both sides towards the center, press lightly, and cut into 1–1.5 cm thick slices.

  3. Bake:
    Place the slices on a baking sheet lined with parchment paper and bend one end into a heart shape. Brush with the egg yolk and milk mixture.
    Bake in a preheated oven at 200 °C (top/bottom heat) for approximately 15–18 minutes, until golden brown.

Tip: Dust with a little powdered sugar while still warm or decorate with melted dark chocolate – for extra enjoyment!
