Preparation of vegan tomato soup with black rice

- Cook the rice: Wash the black rice thoroughly and cook it in lightly salted water according to the instructions on the packet. This rice not only adds texture to the soup, but also additional nutrients.

- Prepare and bake the vegetables: roughly chop the onions, garlic and beef tomatoes. Place everything in a large casserole dish and season with olive oil, salt, pepper, basil, dried chili flakes and dried herbs. Mix everything well so that the vegetables are evenly covered with oil and spices.

- Bake and puree: Place the casserole dish in the preheated oven at 200 degrees Celsius and bake the vegetables for about 40 minutes until they are soft and aromatic. Then take the vegetables out of the oven and puree them with a hand blender to make a creamy soup. Season to taste with salt and balsamic vinegar. For a creamier consistency, you can add a little vegan crème fraîche or water, depending on how much liquid the tomatoes have released.
