Baked nachos with veggie mince

Big cinema: Baked vegan nachos with vegan cheese, jalapenos and Lotao Jackfruit Veggie Hack .
These baked, vegan nachos are very easy to prepare and the ideal snack for a cozy movie night.
The recipe for the cooking show with Sandra Anna Christen, or “Frau Bunt”. Sandra is an expert in culinary experiences . You can cook well with it without needing fancy equipment. With creativity, know-how and ease, she conveys the fun of cooking. Here is the complete recipe:

Ingredients:

  • 50 g Lotao Jackfruit Veggie Hack Organic
  • 1 onion, finely diced
  • 1 garlic clove, cut into thin slices
  • 1 tbsp tomato paste
  • 200 ml tomatoes (can)
  • 250 ml water
  • 1 tbsp pomegranate syrup
  • 1 tbsp dark balsamic vinegar
  • 1⁄2 tsp fenugreek
  • 1 1⁄2 tsp rose pepper
  • 1⁄2 tsp Java Kiss coconut blossom sugar
  • rapeseed oil
  • Salt pepper

for the vegan cheese sauce:

  • 250g potatoes
  • 100 g carrots
  • 1 onion
  • 1 clove of garlic
  • 1 tbsp mustard
  • 1 tbsp lemon juice
  • 1-2 tbsp Schabzig clover
  • 1 teaspoon rose paprika powder
  • salt and pepper
  • Tortilla chips

for the topping:

  • 3 tomatoes finely diced
  • 3 stalks of spring onions
  • 1 tbsp finely chopped jalapeños
  • 1 tbsp finely chopped chili in red & green

Preparation:

  1. Soak the Lotao Jackfruit Veggie Hack Organic with boiling water or vegetable soup according to the package instructions. Heat the oil in a pan and sauté the onions and garlic at a medium temperature until soft. Add the Lotao Jackfruit Veggie Hack Organic and roast.
  2. Now add the tomato paste, spices and sugar to the jackfruit veggie mince and caramelize for about 3-5 minutes. Season with salt & pepper.
  3. Add the canned tomatoes, pomegranate syrup, water and dark balsamic vinegar. Let the minced meat sauce simmer gently for about 10-15 minutes or until the sauce is nice and creamy. Set aside.
  4. Spread the tortilla chips or alternatively taco shells in a baking dish. Tip: This Jackfruit Veggie Hack Bolo is also perfect for pasta or lasagne. If you prefer something a little more Asian, you could also try the Chinese eggplant pan with veggie mince .
  5. For the vegan cheese sauce, peel the vegetables, cut them into small pieces and bring them to the boil in a pot of salted water and simmer for about 10-15 minutes until the vegetables are completely soft. Danger!!! Reserve cooking water.
  6. Mix all ingredients and spices in a blender with the cooking water to form a creamy sauce. The consistency is determined by the cooking liquid of the vegetables. It shouldn't be too liquid for gratinating. Season with salt & pepper to taste.
  7. To top the chips, halve the tomatoes, then quarter them & then remove the pulp with a knife and then dice the tomatoes. Cut the spring onions into fine rings.
  8. Now distribute the finished “Lotao Jackfruit Veggie Hack” bolo evenly on the tortilla chips. Pour the cheese sauce over it and gratinate in the oven at 200 degrees for 10-15 minutes.
  9. Then take it out and top with the onions, the jalapeños and if you like it spicier, the chilies. Bon appetit !
