Ingredients for 2 people:

✓ 2 tbsp olive oil
✓ 1 packet Lotao Veggie Mince
✓ 1 packet of Lotao Pink Basmati Rice
✓ 1 medium onion
✓ 1 red bell pepper
✓ 1 clove of garlic
✓ 1 tsp paprika powder
✓ 1 tsp cumin
✓ 1 tsp salt
✓ 1 tsp oregano
✓ 2 tbsp tomato paste
✓ 500 ml hot water
✓ 1 tbsp chopped fresh mint
✓ 200 g plant-based cream (e.g. crème fraîche or yogurt alternative)
✓ Juice of half a lime
✓ Salt & Pepper
✓ 1 avocado
✓ 1–2 tomatoes, finely chopped
✓ Some fresh parsley

Preparation:

  1. Prepare rice and minced meat
    Cook the pink basmati rice and prepare the veggie mince according to the package instructions.

  2. Sauté vegetables
    Heat the olive oil in a pan. Finely chop the onion, bell pepper, and garlic and fry until translucent.

  3. Season the minced meat and simmer
    Add the prepared veggie mince. Season with paprika, cumin, salt, and oregano. Stir in the tomato paste, roast briefly, and deglaze with hot water. Simmer for about 15 minutes until the consistency is nice and creamy.

  4. Mix the creamy topping
    Mix the vegetable cream with lime juice, mint, salt, and pepper. Season to taste and chill.

  5. Serving
    Divide the cooked pink basmati rice into bowls, top with the spicy mince and garnish with avocado cubes, chopped tomatoes, parsley and the lime and mint cream.
