Stuffed Peppers with Veggie Mince

In this vegan version, the peppers are stuffed with a delicious mixture of Lotao Basmati Rice , Lotao Veggie Mince and a flavorful tomato sauce. Topped with (vegan) feta, they are baked in the oven until they are wonderfully soft and flavorful - a simple yet impressive dish that is perfect for a tasty lunch or dinner.

✓ 4 red peppers
✓ 100 g Lotao Basmati rice
✓ 50 g Lotao Veggie Mince
✓ Some olive oil
✓ 1 clove of garlic

✓ 1 tbsp tomato paste
✓ 300 ml strained tomatoes
✓ (Vegan) Feta
✓ Spices of your choice

Preparation of stuffed peppers with veggie mince

1. Prepare the peppers : Wash the peppers, cut off the tops and hollow out the insides. Place the prepared peppers in a baking dish with a little water and bake in a preheated oven at 200 degrees Celsius for 20-30 minutes until soft.

2. Cook the rice : Wash the Lotao Basmati rice thoroughly and cook it in lightly salted water according to the instructions on the packet until cooked. Set aside.

3. Fry the veggie mince : While the rice is cooking, heat some olive oil in a pan and fry the finely chopped onion and garlic clove until they are translucent. Add spices of your choice and tomato paste and fry briefly to release the aromas. Then add the Lotao veggie mince and fry well.

4. Prepare the sauce : Add about 100 ml of the tomato puree to the pan and mix well. Add the cooked rice and simmer for about 5 minutes to allow the flavors to combine. Season with salt and pepper if necessary.

5. Fill the peppers : Place the remaining strained tomatoes on the bottom of a baking dish. Fill the pre-baked peppers with the rice-veggie-mince mixture and top with (vegan) feta.

6. Final baking : Place the stuffed peppers back into the baking dish and bake for another 20 minutes at 200 degrees Celsius, until the feta is lightly browned and the peppers are completely soft.

7. Serve and enjoy : Serve the stuffed peppers hot – perfect with a fresh salad or a delicious side dish of your choice.
