Ingredients for 4 wraps:
For the jackfruit filling:
✓ 400 g Lotao Jackfruit Natural
✓ 1 onion, diced
✓ 3 cloves of garlic, finely chopped
✓ 2 tbsp tomato paste
✓ 3 tsp paprika powder (sweet or smoked)
✓ 1 tsp chili flakes
✓ 1 tsp cumin
✓ ½ tsp onion powder
✓ 1 tsp dried oregano
✓ approx. 150 ml vegetable stock
✓ Salt & pepper to taste
✓ Some olive oil for frying
For the wraps & toppings:
✓ 4 large tortilla wraps or tacos
✓ Guacamole (avocado, lime juice, salt, optional cilantro)
✓ 100 g corn (cooked or from a jar)
✓ Pickled red onions
✓ Optional: Salsa, vegan sour cream, fresh coriander
Preparation:
-
Fry the base
In a large pan, sauté diced onions in a little olive oil until translucent. Then add the garlic and fry briefly. -
Aromatic spice
Stir in tomato paste and let it caramelize slightly. Then add paprika, chili flakes, cumin, onion powder, and oregano. -
Preparing jackfruit
Drain and rinse the Lotao jackfruit , then squeeze it lightly. Add it to the pan and toss with the spices. -
Simmer & create structure
Deglaze with vegetable stock. Simmer over medium heat for about 10 minutes until the liquid has evaporated. Pull the jackfruit apart with two forks to create the typical "pulled" texture. -
Top the wraps
Briefly warm the tortillas, then fill with jackfruit, guacamole, corn, and pickled onions. Top with fresh herbs or sauces, if desired.
Tip: For more roasted flavors, you can let the finished jackfruit filling brown briefly under the grill or in the oven.
