Wonderfully refreshing, crunchy and healthy : With her great jackfruit wrap idea, cookbook author and food stylist Sabrina Sue Daniels presents the Asian superfruit as trendy street food. If you're interested in more recipe ideas, Sabrina's new cookbook "Cooking with Jackfruit" is recommended.
Ingredients:
- 1 ripe avocado
- Juice of 1/2 lemon
- 1 tbsp sour cream
- Salt pepper
- 1 red onion
- 1 clove of garlic
- 30 g leaf spinach
- 75g cherry tomatoes
- 3 rapeseed oil
- 200 g Lotao Green Jackfruit natural
- 1 tbsp ajvar
- 1 tsp paprika powder (noble sweet)
- 3 flour tortillas
Directions:
- Halve the avocado and then remove the flesh. Add lemon juice and sour cream and season with salt and pepper.
- Peel the onion and garlic clove and chop finely. Wash and dry the spinach leaves and cherry tomatoes. Additionally quarter the cherry tomatoes.
- Heat 2 tablespoons of rapeseed oil in a pan. Briefly fry the onion and garlic in it.
- Then add the jackfruit flesh and season with ajvar, paprika powder, salt and pepper.
- Spread the flour tortillas on a work surface. Spread with avocado puree. Then top with jackfruit, spinach leaves and cherry tomatoes.
- Fold in the sides and then roll up tightly from below.
- Heat the remaining olive oil (1 tbsp) in a grill pan. Place the wrappers in and fry until golden brown on both sides, 2-3 minutes. To serve, cut the wraps diagonally and enjoy. And you're done!
