Erythritol is also very popular with diabetics because the low glycemic index of erythritol does not lead to an increase in blood sugar levels. So quickly get all the ingredients to hand and bake the pistachio curls, enjoy them and have a clear conscience.

Ingredients:

  • 300g flour
  • 200 g Lotao organic erythritol
  • 1/2 tsp cinnamon
  • 2 tsp grated lemon peel
  • 1/2 tsp baking powder
  • 125g vegan butter
  • 1 egg yolk
  • 2 tbsp crème fraîche

for the topping:

  • 125g powdered sugar
  • 2 tbsp lemon juice
  • 50g chopped pistachios

Preparation:

  1. Mix the flour, sugar, cinnamon, grated lemon peel and baking powder well in a bowl. Fold in the vegan butter in small pieces. Add egg wash and crème fraîche. Knead everything well.
  2. Wrap the finished dough in cling film and let it rest in the fridge for about 2 hours. Then roll out the dough on a well-floured work surface and cut it out.
  3. Place all the curls on a baking tray prepared with baking paper and bake in a preheated oven at 160*C for 12 minutes.
  4. After the curls have cooled, mix the powdered sugar with lemon juice. Spread it on the curls and garnish with pistachios. Cranberries as a topping are also a delicious alternative.
