A very special recipe from Inge Emmert from St. Georgen made it to third place in the Lotao recipe competition: Oriental Mango Welcome! In this sophisticated starter , tender lamb fillet meets a fruity mango salad, rounded off by the smoky aroma of Oriental Sensation Smoked Rice - a pleasure straight out of the Arabian Nights!
Lamb fillet with fruity mango salad on a bed of rice - doesn't that look tempting?
Ingredients:
Preparation:

- Mix the marinade ingredients together well until the salt and sugar have dissolved. Marinate the lamb fillet in it for about 5 hours, turning occasionally.
- After 5 hours, remove the lamb fillet from the marinade and dry slightly. Fry the fillet in a pan, then cook in the oven at 180 °C for about 30 minutes.
- Prepare the rice according to the package instructions. At the end add the toasted sesame seeds.
- Peel and seed the mango and cut the flesh into matchstick-sized strips. Finely chop the onion and mix it with the mango strips, ginger, lime juice, sesame oil and coriander. Let it sit in the fridge for an hour.
- To serve, spread the rice on a plate, spread the mango salad on top and place the thinly sliced lamb fillet on top. Bon appetit!
