tender lamb fillet on fruity mango salad & rice

A very special recipe from Inge Emmert from St. Georgen made it to third place in the Lotao recipe competition: Oriental Mango Welcome! In this sophisticated starter , tender lamb fillet meets a fruity mango salad, rounded off by the smoky aroma of Oriental Sensation Smoked Rice - a pleasure straight out of the Arabian Nights!


  • 125g Oriental Sensation Smoked Rice
  • Some toasted sesame seeds
  • 500 g lamb fillet
  • 1 green mango
  • ½ small red onion
  • 1 tbsp finely chopped ginger
  • Juice of one lime
  • A few drops of sesame oil
  • Some coriander leaves
  • For the marinade:
  • 100g salt
  • 100 g coconut blossom sugar
  • 50 ml soy sauce
  • 2 chopped chili peppers
  • 1 clove of garlic
  • 1 tsp finely chopped ginger
  • 5 pieces of star anise


Lamb fillet with fruity mango salad on a bed of rice - doesn't that look tempting?
  1. Mix the marinade ingredients together well until the salt and sugar have dissolved. Marinate the lamb fillet in it for about 5 hours, turning occasionally.
  2. After 5 hours, remove the lamb fillet from the marinade and dry slightly. Fry the fillet in a pan, then cook in the oven at 180 °C for about 30 minutes.
  3. Prepare the rice according to the package instructions. At the end add the toasted sesame seeds.
  4. Peel and seed the mango and cut the flesh into matchstick-sized strips. Finely chop the onion and mix it with the mango strips, ginger, lime juice, sesame oil and coriander. Let it sit in the fridge for an hour.
  5. To serve, spread the rice on a plate, spread the mango salad on top and place the thinly sliced ​​lamb fillet on top. Bon appetit!
