Orange rice is particularly popular because of its fruity aroma and sunny, cheerful color . Beetle star chef Volker Eisenmann was also enthusiastic about “Rising Sun” and used it to create a surprising rice dessert : Rising Sun milk dessert with basil caramel & blackberries :
Ingredients (for 2 people)
for the rice pudding:
- 600 ml milk
- 1 pinch of Maldon Sea Salt
- 60g brown sugar
- 150 g Lotao Basmati rice
- Zest of an orange
- 1 vanilla bean
- 25ml Rising Sun Elixir
for the basil balsamic caramel:
- 2 stalks of basil
- 2 tbsp balsamic vinegar
- (25 years old)
- 100 ml water
- 100 g coconut blossom sugar
- 250g blackberries
- 2 oranges
- 4 basil leaves
Preparation:
- Bring the milk with salt and sugar to the boil, add the rice and cook until al dente, about 30 minutes, stirring constantly.
- Then add the Elixir, put the rice on a flat plate and let it cool in the fridge for an hour. Make caramel from the sugar, deglaze with water and balsamic vinegar.
- Add the basil stalks, reduce to a syrup and keep warm. Wash the blackberries and marinate them in a bowl with some orange zest and Grand Marnier. Peel the oranges and cut the fillets out of the segments.
- To serve, place the blackberries in a circle on a plate and place the rice flavored with the elixir in the middle. Place the orange fillets decoratively on top and finish with the basil leaf and caramel. Good succeed ;)
