Vegan meatloaf wrapped in puff pastry

A big meal with family or friends is coming up and you don't know what to cook vegan? Should it taste good to everyone, be easy to prepare and also look great? The search is over with this vegan meatloaf wrapped in puff pastry! The Austrian food blogger Jelena Maier from Schnabularasa developed for us.

This delicious vegan roast is ideal for the whole family. You can prepare it really well and then just put it in the oven. Our Lotao Veggie Hack is used for the plant-based meatloaf, which is available in a practical and inexpensive storage size for such occasions.

The Lotao Veggie Mince is used for the vegan meatloaf in puff pastry

Ingredients for your vegan meatloaf:

✓ 120 g jackfruit veggie mince
✓ 2 tbsp vegetable broth paste
✓ 2 tbsp olive oil
✓ 1 onion
✓ 2 cloves of garlic
✓ 80 g mushrooms
✓ 1 tbsp mustard
✓ 15 g chickpea flour / egg substitute powder
✓ 3 tbsp tomato paste
✓ 2 tbsp soy sauce
✓ 1 teaspoon paprika powder
✓ 4 tbsp fresh herbs
✓ 4 tbsp breadcrumbs
✓ Salt/Pepper
✓ 1 pack of puff pastry

Preparation:

1. Mix the Lotao Veggie Mince with the vegetable stock paste in a bowl and pour in three times the amount of freshly boiled water.

2. Let the vegan minced meat sit for 15-20 minutes so that it can absorb the flavors from the vegetable broth.
Tip for those in a hurry: The vegan minced meat can be used even after 2 minutes.

3. Meanwhile, peel and finely chop the garlic and onion.

4. Clean the mushrooms and cut them into pieces.

5. Heat the oil in a pan and fry the onion, garlic and mushrooms for a few minutes.

6. Then add the drained veggie mince and continue frying until lightly browned.

7. Mix the fried ingredients with the remaining ingredients and spices and puree briefly, for example with a food processor or a hand blender.

8. Roll out the puff pastry on a baking tray lined with baking paper and fill the meatloaf mixture in the middle.

9. Cut the side edges of the puff pastry into narrow strips and fold them over the mixture alternately from both sides to create the herringbone pattern.

10. Bake the vegan meatloaf in the oven at 200 degrees for 25-30 minutes.

11. Cut the meatloaf into wide slices with a sharp knife and serve with cranberry sauce, for example.
