Black Jack: Black rice with jackfruit curry

Even if the preparation of “Black Jack” seems easy, the complexity of this dish should not be underestimated. Similar to the popular card game of the same name, you don't want to lose your "bet". The ready-made dish “Jackfruit Curry” from Lotao is used here as a basic mixture and refined with fresh vegetables and herbs. The royal black rice is the crowning glory of Black Jack!

Ingredients:

(for 2 people)

Preparation:

  1. Put the Royal Pearl Black rice in a saucepan, wash it and add water. Allow to soak for 10 minutes. Turn the stove to the highest level and bring the rice to the boil. Simmer gently with the lid closed for 40 minutes until the water has evaporated. Salt and fold in olive oil before serving.
  2. For the curry, put the Lotao Green Jackfruit Curry in a pot and bring to the boil with tamarind paste and coconut milk. Fold in two small chili strips together with the mung bean sprouts.
  3. Blanch the princess beans in hot water and then plunge them into cold water. Cut into small pieces and fold into the vegetables. Add some lemon juice and salt and pepper to taste.
  4. Serve garnished with mint or coriander along with the black rice. Bon appetit!
