Ingredients:
- 50 g Lotao Veggie Chop
- 100 ml vegetable broth
- 1 onion
- 100 g sugar snap peas
- 100 g broccolini (wild broccoli or asparagus broccoli)
- 50 g cashew nuts
- 1 piece of ginger (thumb-sized, chopped)
- 2 garlic cloves pressed
- 1 tsp tomato paste
- 1 teaspoon Java Kiss coconut blossom sugar
- 2 tbsp soy sauce
- 1 teaspoon smoked salt
- ½ tsp black pepper
- 1 teaspoon sweet paprika powder
- 1 tsp sesame oil
Preparation:
- Blanch the sugar snap peas and broccolini in boiling salted water for 3 minutes. Then remove, rinse under cold water and set aside.
- Finely chop the onions and sauté in hot sesame oil.
- Mix in the cashews and toast them a little, add the garlic cloves and ginger. Add tomato paste and sugar and fry.
- Add the jackfruit-pea protein veggie mince , sugar snap peas and broccolini to the pan and sauté for 30 seconds.
- Add the vegetable stock and let it simmer briefly with the lid closed. Season with salt, pepper, paprika powder and soy sauce.
- Arrange on plates, garnish with spring onions and serve with Indian Tiger Umber red rice.
