This recipe presents Lotao Royal Pearl Black black rice in a very classic combination with black caviar , refined only by the gentle aromas of shallots, olive oil and white wine - black gold in its pure, pure appearance!
Black caviar - the noble complement to Royal Pearl Black!
- Wash Royal Pearl Black black rice in a sieve. Heat olive oil in a pot. Sauté the diced shallots with the rice. Deglaze with white wine and pour in water. Bring to the boil and slowly simmer until finished.
- After 35 minutes, remove the rice from the heat, pour off the water, fold in the Royal Pearl Perfectioner, add salt and cover and let it soak for 5 minutes. Beat the egg whites with a pinch of salt until stiff and carefully fold into the rice.
- Heat a non-stick pan with a little oil. Place a tablespoon of the rice mixture in a greased ring. Remove the ring and let the rice mixture set in the pan. Fry on both sides in a pan until crispy.
- Mix the créme fraîche with wine vinegar and lemon juice, pepper and salt. Garnish the thalers with créme fraîche, chives and caviar. Bon appetit!
