Royal Pearl Black appetizer with black caviar

This recipe presents Lotao Royal Pearl Black black rice in a very classic combination with black caviar , refined only by the gentle aromas of shallots, olive oil and white wine - black gold in its pure, pure appearance!

Ingredients:

Black caviar - the noble complement to Royal Pearl Black!

  • 40g black organic rice Lotao Royal Pearl Black
  • 1 tbsp olive oil
  • 1 shallot
  • 25ml white wine, dry
  • 1/2 l water
  • Salt
  • 1 tsp Royal Pearl Perfectioner
  • 2 egg whites
  • oil for frying
  • 2 tbsp crème fraîche
  • 1 tbsp wine vinegar
  • 1 tsp lemon juice
  • Salt pepper
  • 50g caviar
  • Chives, finely chopped

Preparation:

  1. Wash Royal Pearl Black black rice in a sieve. Heat olive oil in a pot. Sauté the diced shallots with the rice. Deglaze with white wine and pour in water. Bring to the boil and slowly simmer until finished.
  2. After 35 minutes, remove the rice from the heat, pour off the water, fold in the Royal Pearl Perfectioner, add salt and cover and let it soak for 5 minutes. Beat the egg whites with a pinch of salt until stiff and carefully fold into the rice.
  3. Heat a non-stick pan with a little oil. Place a tablespoon of the rice mixture in a greased ring. Remove the ring and let the rice mixture set in the pan. Fry on both sides in a pan until crispy.
  4. Mix the créme fraîche with wine vinegar and lemon juice, pepper and salt. Garnish the thalers with créme fraîche, chives and caviar. Bon appetit!
